Cheese & Chives Mashed Potatoes

Potatoes are one of my favourite foods, (I eat them like dessert y'all!) and I am a strong believer the only ingredients that should be added to mashed potatoes are milk and margarine...but since we are eating the last of our potatoes from last years garden, they are starting to taste quite bland and they need a little pick me up.  

So I tried this recipe for super last night, most of the family wasn't to fond of them because they don't like parmesan cheese, but there were a few of us who really enjoyed them!
these are super filling, so a little goes a long way!

3 lbs. potatoes, peeled and cut into 2-inch cubes
3/4 cup parmesan cheese, shredded
1/2 cup margarine
2 tsp. minced garlic
1/2 cup milk
4 oz. cream cheese
1/4 cup fresh chives
salt and pepper to taste

- Cook potatoes in water until they are soft, but not falling apart.
- Drain potatoes, put them back in the pot and cook on low heat with the lid on for about 2 minutes (this helps the potatoes dry out a little).
- Add all ingredients to potatoes and mash (or mix with a hand mixer) until well mixed.
- It is best to serve the potatoes right away, but if you need to, you can put them in a casserole dish and keep warm in the oven at a low temperature.

Oven Fries & Dipping Sauce

i made these fries a few years ago when we had our church over for an event, they worked really well for feeding a crowd! 
on monday I accidently peeled to many potatoes for the meal i was making, so I threw them in the fridge and covered them in cold water overnight, yesterday i ended up being gone till about an hour before supper so when i got home i just threw them in the oven with some chicken fingers for a quick and easy supper that didn't feel quite as unhealthy as store bought fries :) i found this dipping sauce on pintrest, so i whipped that up as well, hope you enjoy!

Oven Fries
Potatoes
Canola oil
Seasoning salt

-Peel or scrub potatoes, cut into fry size pieces.
-Place in a bowl and cover with cold water, let fries soak for a few hours or overnight (you can skip this step if you are short on time).
-Rinse and drain fries, pat with paper towel to soak up water.
-Coat fries in a little oil, toss with seasoning salt (the amount depends on how salty you want them).
-Place on a greased cookie sheet and bake @ 375F for 30 minutes, and then @ 425F for another 30-40 minutes (stirring a few times) until fries are as crispy as you want them.

Fry Dipping Sauce
1/4 cup miracle whip
1/8 cup ketchup
1/4 tsp garlic powder
1/4 tsp mustard
1/4 tsp dill pickle juice
1 pinch salt
1 pinch ground black pepper

-Mix all ingredients together.
-Dip your fries!

Deep Fried Tortilla Chips


Super easy and delicious homemade chips!
 Ingredients:
Oil (for deep frying)
Tortilla shells (I used whole wheat, medium sized)
Salt

• Turn deep fryer on to 375F.
• Lay tortilla shells on a cookie sheet, bake in the oven @350F for 5 minutes, (this dries the shells so they fry better).
• Allow tortilla shells to cool for a few minutes.
• Cut each shell into 8 triangles.
• Put cut up shells in deep fryer, stirring constantly for 30-40 seconds (depending on how much of a crunch you want) until lightly browned.
 • Lay chips on paper towel to drain oil off.
 • While chips are still hot sprinkle with salt. (next time I make these I'm gonna try sprinkling popcorn seasoning on them...I think it would be delish!)
