Honey Mustard Sauce ~ Sugar Free





1/2 cup olive oil mayonnaise
1 1 /2 tbsp. brown sugar truvia (or sweetener of choice)
2 tbsp. mustard
1 tbsp. lemon juice
1/8 tsp. salt

- Place all ingredients in a small bowl and mix together.
- ENJOY!!

Pumpkin Pancakes ~ Gluten Free

 
Not only are these pancakes gluten free and sugar free, but I just noticed they are dairy free as well! 
I have been had a really hard time finding a way to make pancakes with a nut flour that I actually taste good.
(I used to use oat flour, but I am not supposed to eat oats or any grain anymore :o)
I have tried coconut and quinoa flour, but I hated the taste of both of them! Almond flour on its own makes a really dry pancake, but pumpkin makes it really moist and delicious! I like to top these with some of my Sugar Free Whipped Cream and maple syrup.
Mmm... :)


1/3 cup almond flour
1 egg
1/3 cup almond milk
1 tsp vanilla
1/8 cup pumpkin
1/2 tsp baking powder

- Mix all ingredients together in a blender.
- Pour half of batter in a frying pan, coated with olive oil or butter on medium heat, flip once the bottom is browning. (if I am in a hurry I cook them on high heat, but then they turn out a little charred and are hard to flip, if you have the time, medium heat is best. )
- Repeat with the other half of your batter :)
- ENJOY!

Pumpkin Coffee Creamer ~ Sugar Free



My Mom created this recipe the other day, it is SO GOOD!! 
Trust me...You need this creamer in your life!


2 Tbsp. cream
2 Tbsp. pumpkin
2 doonks stevia (or to taste)
1/4 cup almond milk
optional pumpkin spice or cinnamon

- Mix all ingredients together, and heat on stovetop in a saucepan until creamer is hot.
- Pour into freshly brewed coffee.
- ENJOY!!

Easy Marinara Sauce ~ Sugar Free

Here is the perfect sauce for you! I have made it with both fresh and dried herbs. It is WAY better if you can get your hands on some fresh herbs!
I was told to go on a sugar free, grain free (feels like everything free :P) diet 5 weeks ago, so I have had to be really creative with my cooking, otherwise I end up sitting on the floor in the kitchen crying cause I'm so hungry...JK...I haven't actually cried yet, but I have sat on the kitchen floor and felt like crying on several occasions...its hard to be creative when you are hungry! :D
I have used this on pizza, in soup, in zucchini lasagna (recipe coming soon!), and when I'm really hungry I just eat it straight! (JK!) I think I could eat it straight though...its just that good ;)
I'm gonna stop writing now, cause I have barely  eaten anything today and my computer is dying...ya, life is hard...(insert sarcasm emoji)




2 Tbsp. olive oil
1/2 cup onions, cut into small chunks
1 1/2 tsp. minced garlic
2 Tbsp tomato paste
3 cups fresh tomatoes, cut into small chunks (you can also use canned tomatoes)
3 Tbsp. fresh parsley, diced (fresh tastes best, but of you don't have any you can use about 2 Tbsp. dried parsley)
2 Tbsp. fresh Basil, diced (you can also use 1 tbsp. dried)
1 Tbsp. Oregano
1 tsp. Truvia (or 1 Tbsp. sugar)
1 1/2 tsp. salt

- In a small saucepan, saute onions, garlic and oil for 3 minutes.
- Add rest of ingredients.
- Bring sauce to a boil, then reduce heat to low, cover and simmer for 30 minutes.
- It stays good in the fridge, or you can freeze it.
- ENJOY!

2 cups strawberries
1 cup milk
2 tbsp. coconut sugar
1 tsp vanilla

Coconut Waffle Sauce ~ Sugar Free ~ Gluten Free

Afew mornings ago I was craving our families Waffles recipe.
But since I've been working at eating healthier lately, I made these gluten free waffles and topped them with my version of waffles sauce, and some strawberries.
the sauce is not extremely sweet, so if you aren't planning on adding strawberries you might want to add a little more sweetener.
Coconut sugar has been my go to sweetener lately, but i have been wanting to start trying some other kinds, what's your favourite?


3 cups milk
3/4 cup coconut sugar
1/4 tsp salt
1/3 cup cornstarch mixed with water
1/2 tsp vanilla
1 tbsp. margarine

- Bring milk, salt and sugar to a boil in a sauce pan on high heat, stirring every once in a while.
- While milk is heating, mix cornstarch with a little water (until it is smooth)once milk is boiling, remove from heat, add cornstarch mixture while stirring with a whisk, place back on heat for a few seconds until sauce is thick.
- Remove from heat and add vanilla and margarine, mix well.
- Pour over Gluten Free Waffles and top with strawberries.
- ENJOY!

Banana Upside-Down Cake ~ Gluten Free

well y'all, I tried five times over the weekend to make a gluten free banana bread, and every single one of them crumbled when i tried to slice them. so i changed my plan and came up with this, its not banana bread, but it is super moist and just plain yummy.
i had to guard this stuff with my life just to get a picture of it...so i think it passed the test :) and hopefully my mother will forgive me for using so many of our bananas :D


1/4 cup margarine
1/2 cup white sugar (or 3/4 cup coconut sugar)

1 egg
1 banana
1/4 cup milk

3/4 cup oat flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

3/4 cup chocolate chips

- Cream butter and sugar together.
- Mix in banana, milk and egg.
- Add all dry ingredients except for chocolate chips, mix well.
- Fold in chocolate chips.
- Pour into a greased 8x8 pan.
- Bake @ 350F for 20-3o  minutes, or until toothpick comes out almost clean from the center.
- Cool, and serve upside down.
- ENJOY!

Rhubarb Crunch ~ Gluten Free

last summer we had friends over, and one of them was allergic to gluten, so we took this recipe and used oat flour instead of white, it turned out super good!


4 cups sliced (about 1/2" thick) rhubarb
1/2 cup white sugar
1 cup old fashion oats blended, or 1 cup of oat flour (those with allergies be sure to use gluten free oats)
1/2 cup white sugar
1 tsp baking powder
1/2 tsp salt
1 egg
1/3 cup margarine, melted


- Spread rhubarb in the bottom of a lightly greased pie plate.
- Sprinkle 1/2 cup of sugar over rhubarb.
- Mix dry ingredients together, add the egg and mix well.
- Spread over rhubarb (it doesn't spread evenly, but it will as it bakes).
- Pour melted margarine over the oat mixture.
- Bake @ 350F for 40-50 minutes until topping is cooked and golden brown.
- Top with ice cream and ENJOY!

Vanilla Strawberry Waffles

Jen introduced this recipe to me, and it is now one of my favourite things to whip up for lunch or a quick snack.
These waffles are healthy and filling, and in my opinion they taste every bit as good as regular waffles.
Aaand they are so light and fluffy in your tummy! they don't leave you feeling like you've gained 5 pounds from eating them...its a win win y'all!!


1/3 cup old fashion oats (or oat flour)
1/3 cup cottage cheese
2 eggs
1/2 tsp vanilla
1/2 tsp baking power
Vanilla yogurt
Strawberries

  • Preheat waffle iron.
  • Put oats into blender (I use a ninja mixer) blend oats until they are smooth like flour.
  • Add the remaining ingredients and blend well.
  • Cook waffles in greased waffle maker (makes two waffles)
  • Spread vanilla yogurt in-between waffles and top with strawberries.
  • ENJOY!
