I don't know about you, but with all the warm weather we have been having this spring i have been spending a lot more time outside than in the kitchen, the yard is pretty much cleaned up, and the kids and i got about half of the garden in one day last week, so now we are waiting for the sun shine and the weather to warm back up to get the rest of it planted. but since its a little too cold to be outside, i have been working on some recipes to post.
I never liked quiche growing up..until I came across this recipe, its super moist, full of flavour, and perfect for a cold snowy spring day like today, i personal think it tastes best hot out of the oven with a little sour cream on top.
1/8 tsp minced garlic
1/2 cup bacon, cut into 1" squares (I used chicken bacon)
1/4 cup diced sweet peppers
1/4 cup parmesan cheese
1/4 cup shredded mozzarella cheese
1/4 cup plain yogurt
1/4 cup cream
1/4 cup onions, diced and saute'd in about 2 tsp margarine
salt
- Mix all ingredients together.
- Place in two greased ramekins or a non stick pan.
- Bake @375F for 30-50 minutes (depending on the thickness of the quiche) until eggs are golden brown and cooked through.
